In many respects, catering is just another food-service business ... but with a special twist: The extraordinarily high level of pressure for planning and performance. In this respect, catering makes a typical restaurant business look like a Sunday afternoon picnic.

There are two basic types of catering: on-premise and off-premise. In the case of on-premise catering, the food is prepared and served in the same place. For off-premise catering, the food is prepared in one place, and then transported to the venue for serving.
